Faktor-Faktor yang Mempengaruhi Perilaku Konsumsi Makanan Sehat pada Generasi Z Indonesia: Peran Literasi Pangan dan Pengetahuan Gizi

Perilaku konsumsi makanan sehat pada Generasi Z dipengaruhi tidak hanya oleh faktor kognitif, tetapi juga oleh kondisi yang memungkinkan pilihan sehat diterapkan. Penelitian ini bertujuan menganalisis pengaruh literasi pangan dan pengetahuan gizi terhadap perilaku konsumsi makanan sehat serta menguji persepsi keterjangkauan makanan sehat sebagai variabel mediasi. Penelitian menggunakan pendekatan kuantitatif eksplanatori dengan desain cross-sectional. Data diperoleh dari 155 responden Generasi Z di Jakarta, Bandung, dan Surabaya dan dianalisis menggunakan Partial Least Squares Structural Equation Modeling dengan SmartPLS. Hasil penelitian menunjukkan bahwa literasi pangan berpengaruh positif terhadap perilaku konsumsi makanan sehat dan keterjangkauan makanan sehat. Pengetahuan gizi berpengaruh positif terhadap keterjangkauan makanan sehat, tetapi tidak berpengaruh langsung terhadap perilaku konsumsi makanan sehat. Keterjangkauan makanan sehat berpengaruh positif terhadap perilaku konsumsi makanan sehat serta mampu memediasi pengaruh literasi pangan dan pengetahuan gizi terhadap perilaku tersebut. Mediasi pada hubungan literasi pangan bersifat complementary partial mediation, sedangkan pada hubungan pengetahuan gizi bersifat indirect-only mediation. Kebaruan penelitian terletak pada integrasi faktor kognitif dan keterjangkauan sebagai mekanisme pembentukan perilaku konsumsi makanan sehat pada Generasi Z Indonesia.
